From 17 February 2025, the all-day dining restaurant is launching a new dinner buffet themed ‘Meat The Sea’, an indulgent spread featuring the best from land and sea. On Friday and Saturday evenings, the buffet expands with an even more luxurious selection of seafood, complemented by free-flow wines.

A Celebration of the Finest Ingredients
‘Meat The Sea’ takes buffet dining to the next level, focusing on quality, sustainability, and culinary expertise. Estate partners with top producers, including Blackmore Wagyu for premium full-blood Wagyu beef, Lumina New Zealand for free-range, grass-fed lamb packed with Omega-3, and Les Huîtres Cadoret for the finest French oysters. Locally grown greens from Farmd and gourmet mushrooms from Fogo Fungi complete the exquisite lineup.
Eight Chef’s Signature Creations
One of the highlights of the buffet is a curated selection of eight individually plated dishes, each crafted to showcase bold flavours and impeccable technique:
- King Crab Pasta – Sweet king crab paired with creamy lobster bisque and smoky mussels ragout.
- Estate’s Surf & Turf – Tender Lumina New Zealand lamb served with fresh crab legs and crispy truffle potato pavé.
- Roasted London Duck – Enhanced with Szechuan-spiced pickled daikon and smoky plum barbecue sauce.
- Foie Gras – Pan-seared to golden perfection, paired with teriyaki-glazed unagi and ponzu sauce.
- Wagyu Udon – Featuring premium Blackmore Wagyu in a rich, umami-packed broth.
- Szechuan Prawn Wanton – A balance of spice and seafood sweetness.
- Baby Octopus with Yunnan Fungus Rice – A textural delight with deep, earthy flavours.
- Singapore-style Chilli Prawn – A local favourite elevated with the Estate’s signature touch.

Buffet Highlights – A Feast for Every Palate
The fresh seafood bar is a must-visit. It boasts freshly shucked Cadoret oysters, king snow crabs, scallops, artisan sashimi, and a nigiri bar featuring ASC-certified salmon and hamachi. Carnivores will delight in premium meats such as freshly carved Blackmore Wagyu beef, slow-roasted to perfection, harissa-spiced Sakura chicken, and baked red snapper fillet with cherry tomatoes and pecorino.

Personal Favourites
The Lumina lamb with crab stick and potato slow bake stood out during our visit. The lamb, served rarely, was exceptionally tender and beautifully paired with jus and mint sauce. The combination of lamb and crab was unexpectedly delicious, making it my favourite dish of the evening.
We also loved the Singapore Chilli Prawn with Tempura Mushrooms. The prawn was perfectly cooked, while the sauce struck a perfect balance of sweet and sour. The tempura mushrooms added a light, crispy contrast, making the dish more enjoyable.

Cheese and Dessert Selections
For cheese lovers, Estate offers a curated selection of artisanal French cheeses from Les Frères Marchand, including Brie de Meaux AOP and Tomme de Montagne. Pair them with fresh greens from Farmd for a refreshing contrast.
The dessert station is equally enticing, featuring a variety of tarts, cakes, and gelatos. A standout is the Verrine, a deconstructed dessert jar with Red Fruit Berries, panna cotta, and Carrot Cake with Cream Cheese.

Premium Seafood and Wine Nights
On Friday and Saturday evenings, the buffet expands with an even more indulgent selection:
- Alaskan King Snow Crab Legs and MSC-certified Boston Lobster.
- Lobster Thermidor in saffron cream.
- Slipper Lobster with black truffle sauce and salted cashew nuts.
- Thai Green Curry Sri Lankan Mud Crab served with jasmine rice.
Unlimited house wines and beers can be added for $40++, or elevate the experience with free-flow champagne for $80++.
